I had a Chao that seemed to always sleep when overfed it so I decided to do some research into the matter as I could find no other topics relating to this.
Test 01
Test Subject A
Description: New Born Chao, hatched by shaking by Tails in the dark garden.
Appearance: Mono-Tone Orange Chao, normal eyes, closed smile..
Stats: C,B,C,C,D (0,0,0,0,0)
Personality: None
Results: Eating may slightly increase hunger & hunger set under 1000 is set to 1000

Did you use the Tiny Chao Garden? It has a bar that shows a Chao's hunger.
It also shows a Chao's mood, which also might have something to do with sleeping.
I'm also not sure if anyone knows exactly what causes sleep either, but I do remember that I used to wake up my Chao with fruit though.
If I fed them like, three, they'd wake up for a while, then go back to sleep. It was like caffeine or something.
No, I used Fusion's chao editor to note these values, however your suggestion that the eating fruit may reduce sleepiness is very reasonable and may be correct.
I'll look into it later performing the same test but making sure sleepiness is at the highest possible value and note how long it takes for them to fall back to sleep.

As far as I know, there has been no other study into this sort of behavior, and if there has, it as not been this well detailed.
To clarify some points on your experiment:
You used Fusion's chao editor to see the values of hunger and sleepiness, I assume hunger caps at 10,000 and sleep at 1,000, based on your numbers, but I do not know for sure, since I do not have the chao editor. Sorry for my ignorance on that.
Anyway, you then compared the values for sleepiness after eating set amounts, both from normal fruit and favorite fruit, and you compared those values to the chao being idle.
Am I correct on that?
If so, that seems pretty sound, and your results would seem to imply that sleepiness and hunger are related, unless I am missing something.
The results showed some possible relationship between hunger and sleep but may have just been caused naturally. Also, sleepiness caps at 10,000 so even if it did have some effect, it was minor. Anyway I did the test that chaoadventures suggested and got the following results:

While writing this I thought of another test: Feeding a Chao with 0 Hunger, I'll do the test and get the results up soon!

As far as I have been able to tell, the TCG Hunger and Mood stats are completely separate from the CG Hunger and Mood variables. On multiple occasions, I have had Chao go back and forth, under different conditions, and the bars were never consistent. The results would be even less consistent if someone tried using that.
I think the intention behind the tests are very well meant, but I doubt we'll find much of interest. A lot of the variables were given relationships, but many behave very independently. Or their relationships can be complicated patterns that aren't easy to follow. It is easy to not see very useful results.
