When I used fusions chao editor the extreme made my chao like a big

I wouldn't really call it an "extreme evolution" since it is clearly invoking glitching polygons. I've seen some of the limits evolutions can take before the polygons start glitching, and I assure you that those alone are impressive.

"Extreme Evolutions" are an extra step of evolution that are available as an on/off switch in the chao's code but cannot be accessed in the normal game. The one time I tried them, nothing special happened though.

I remember playing SA1 on DC and raising my golden chao into a Sonic chao. The spikes were so long that they actually went through the ground! I wish I still had the original save file. As was said, extreme evolutions aren't available through normal gameplay because of a soft cap on the floating point value that represents evolutionary progress (of course that cap can be bypassed with by manually editing the values to be higher which is what Fusion's editor does). However, I'm not too familiar with how the DC titles were coded. Is that cap present in those games as well?
