Has anyone had any experience in trying to get a jewel chao by breeding with non-jewel chao, but still with at least one chao created by a jewel chao?
For instance, if I had an invisible chao that came from a ruby chao, would I be able to get a baby ruby chao by breeding the invisible chao? And if so, would it need to breed with any other specific type in order to work?

Yes, you can breeding with any other Chao allows you to get a Jewel Chao as long as a Chao that's breeding has the genes Jewel Chao.
For the non-Jewel Chao, you have to breed with another non-Jewel Chao that's at least a non-Jewel Chao genetically.
